Protein Pantry Beef Rendang

A rich and creamy Beef Rendang adapted the Protein Pantry way. We've made a few simple swaps to reduce the fat while keeping the flavour and creating a satisfying, high-protein family meal.

Ingredients

Beef

  • 1.5kg lean stewing steak or topside, cut into 3cm chunks
  • 1½ tbsp peanut oil

Rendang Paste

  • 10g coriander seeds
  • 10g cumin seeds
  • 10g fennel seeds
  • 10g black peppercorns
  • 360g onions, chopped
  • 6 garlic cloves
  • 3 lemongrass stalks, white part only, chopped
  • 25g fresh ginger
  • 25g fresh galangal
  • 6 red chillies, halved and deseeded
  • 15g fine sea salt

Sauce

  • 200g coconut cream
  • 600g light coconut milk
  • 1½ tbsp tamarind paste
  • ¾ bunch fresh coriander, leaves only

To Serve

  • 600g cooked jasmine rice
  • 100g cooked rice per portion

Method

  1. 1

    Make the paste

    Blend the onions, garlic, lemongrass, ginger, galangal, chillies, spices and salt until a paste forms. Add a splash of coconut milk if needed.

    Brown the beef

    Heat the oil in a large pan. Brown the beef in batches and set aside.

    Cook the paste

    Using the same pan, cook the paste for 5–8 minutes until fragrant and softened.

    Build the curry

    Return the beef to the pan. Add the coconut cream, light coconut milk and tamarind paste. Stir and bring to a gentle simmer.

    Slow cook

    Cook on a low heat for approximately 1½–2 hours, partially covered, stirring occasionally.

    Remove the lid towards the end and allow the sauce to reduce until thick, rich and coating the beef.

    Finish

    Season to taste and stir through the fresh coriander.

Meal Prep It 🍱

  • Divide the Beef Rendang evenly between 6 containers.
  • Add 100g cooked jasmine rice to each portion.
  • Allow everything to cool fully before covering and refrigerating.

This version keeps the rich, creamy flavour of Beef Rendang while replacing most of the coconut cream with light coconut milk. The result is a satisfying family meal providing approximately 64g of protein per serving.
